I got this recipe from a very dear friend and my batch went as fast as hers did:)

Red Velvet Crinkle Cookie Recipe:

• 6 Tablespoons butter, melted
• 1 box Duncan Hines Red Velvet Mix
• 2 eggs
• 1 teaspoon lemon zest (Optional)
• ¾ cup powdered sugar
• 1 teaspoon cornstarch

1. Preheat the oven to 370-degrees. Line two baking sheets with parchment paper and set aside. In a medium bowl, whisk together the powdered sugar and cornstarch. Set aside.
2. In a large bowl, beat the eggs, then added cooled melted butter, lemon zest and cake mix. Mix by hand until combined.
3. Roll into 1-inch balls. Roll each ball in the powdered sugar mixture then place on a prepared baking sheet about 2-inches apart.
4. Bake for 7 – 9 minutes until set. Let cool 1 minute before removing to a wire cooling rack.
Store in an airtight container.
5. Makes about 24 cookies

Personal Comments:

1" balls is a good idea to try and maintain as it can throw off cooking times.
These cookies are fantastic to eat as is and do not require any Cream Cheese Frosting. Just make sure you have a lot of milk if you do put frosting.
